Description
A popover is a light hollow roll, similar to a Yorkshire Pudding, made from an egg batter and made in dedicated popover tins, or muffin tins if you are in a pinch. This recipe for Sourdough Popovers requires just five simple ingredients, a sourdough starter, whole milk, pastry flour, eggs, and salt. You can make your own sourdough starter or inquire after some at a local bakery. Serve the popovers with butter and your favorite jam.

- 140 grams sourdough starter
- 250 mL whole milk
- 120 grams pastry flour
- 3 eggs
- 1 tsp. salt

Directions
- Preheat the oven to 230 Celsius.
- Place the starter, milk, eggs, and salt in a mixing bowl. Stir together and then add the flower.
- Heat a muffin tin in the oven, remove, and grease with oil. Pour in the batter and bake for 15 minutes.
- Lower the heat to 185 Celsius and bake for 15 minutes more. Remove from oven and allow to cool in the tin slightly before removing.
