- 500 grams sourdough starter (~ 2 cups)
- 1.13 kilograms unbleached all purpose flour (2 1/2 lb or ~7 cups, + extra for kneading)
- 2 oranges (large)
- 1 lemon
- 3 Tbsp. cane sugar (unrefined)
- 1 tsp. ground cardamom
- 2 tsp. ground cinnamon
- 1 tsp. nutmeg
- 1/4 tsp. ground cloves
- 1/2 tsp. ground allspice
- 2 eggs
- 1/4 cup raw honey
- 1 cup whole milk
- 1 cup water
- 1 1/2 cups dried fruit (currants, dried cherries, raisins, dried cranberries, chopped apricots, dried figs, etc – soak in warm water for 10 minutes, then drain)
- 1 tsp. sea salt (unrefined)
- 50 grams unsalted butter (~4 1/2 tablespoons, softened and cut into cubes)
