    I've made this twice. The first time the muffins didn't rise very much so the second time I made them I added a teaspoon of baking soda and also a teaspoon of salt, which much improved them! This recipe is pretty flexible because you can substitute other flours; I used 1 cup of whole wheat flour in the second batch, with honey in place of the sugar and they were yummy! I do think a short kneading also helps.

    It turned out really yummy. Better than store bought for sure. I used my 14+ years old sourdough starter and followed the recipe all the way through. No modifications needed. Will make again!
