This is a great recipe not only if you’ve a lot of starter to discard, but for the whole family to enjoy at breakfast! Being Canadian I had to drizzle with maple syrup. Sprinkle with cinnamon and we were in heaven! The only modification I’d make has to do with my oven. Since it runs hot the bottom burned slightly. Next time I will put a pan on the rack below to diffuse the heat from below. This is what I do with baking my sourdough bread.

Very tasty with only the powdered sugar and scrumptious with fresh cut orange, pineapple, dragon fruit and pomegranate. I would suggest using a smaller cast iron pan for a thicker pancake.
