- 397 grams sourdough starter (ripe)
- 13 oz. water (room temperature)
- 600 grams unbleached all-purpose flour
- 12 grams kosher salt
- 425 grams raisins (dark)
- 1/4 cup sugar (mixed with 1 T cinnamon, I used only about a tablespoon of this mixture and reserved the rest for cinnamon toast)
