- lemon juice (A little, for spritzing the apples)
- 3 free-range eggs (large organic)
- 1 cup light brown sugar (packed organic)
- 1/2 cup organic cane sugar
- 2 tsp. bourbon vanilla extract ([or use Kosher vanilla powder, to taste])
- 3 Tbsp. extra light olive oil
- 1/4 cup sour cream
- 2 cups almond flour (aka almond meal)
- 1/4 cup rice flour
- 1/2 cup potato starch (or tapioca starch)
- 1 1/2 tsp. baking powder (* see notes)
- 1 tsp. baking soda
- 1 tsp. McCormick Apple Pie Spice
- 1 tsp. ground cinnamon (or cardamom)
- 1/2 tsp. fine sea salt
- light brown sugar (Organic)
- 1/2 cup pecan halves
