- 1 1/2 lb. beef
- 7 cups cold water (for cooking the meat)
- 1 large onion (finely chopped)
- 3 Tbsp. clarified butter (regular butter or oil)
- 1 bell pepper (sliced into small cubes)
- 7 green beans (flat, cut into 1” strips)
- 2 quince (sliced to 1” wide wedges or 3 potatoes, peeled cubed)
- 2 garlic cloves (minced)
- 1 can garbanzo beans (rinsed, drained)
- 2 Tbsp. red pepper (paste)
- 5 Tbsp. tomato sauce (or 1 ½ tbs paste)
- 1/2 tsp. cumin
- 1/2 tsp. coriander
- 1 tsp. ground black pepper
- salt (to taste)
- plums (Sour dry, handful, I used my sour fruitlavash)
- dry mint
