- 16 oz. noodles (sotanghon, 16 oz., pre-soak in water for 30 minutes)
- 2 cloves garlic (minced)
- 1 yellow onion (or medium white, chopped)
- 1 stalk celery (chopped, about 1/2 cup)
- 1 Tbsp. annatto seeds (or achuete)
- 1/2 cup warm water (to soak achuete)
- 1 cup organic chicken broth
- 2 Tbsp. fish sauce (patis)
- 1 medium carrot (peeled, sliced, about 1 cup)
- 2 cups snow peas (edges trimmed or 'sitsaro')
- 2 stalks scallion greens (chopped, for garnish, optional)
- 1 Tbsp. calamansi juice (for sprinkling, or lemon juice)
- 2 Tbsp. vegetable oil (saute)
- 2 whole hard boiled eggs (peeled, sliced, for garnish, optional)
