- 2 Tbsp. olive oil
- 1 medium yellow onion (finely diced)
- 2 medium carrots (diced)
- 1 celery rib (diced)
- 4 garlic cloves (minced)
- 1/2 tsp. dried oregano
- 1/4 tsp. cumin
- 1/4 tsp. black pepper
- 1 1/2 lb. shanks (Smoked Ham, Ham Hocks or a meaty Ham Bone – we used sliced ham shanks)
- 6 cups chicken broth
- 1 bay leaf
- 12 oz. yellow split peas (or Dried Green, sorted, rinsed and soaked – we used green split peas)
- 1 large potato (10-12 ounces, peeled and cut into ½-1 inch pieces)
- salt (to taste if needed)
