- 2 spring onions (chopped into large chunks)
- 8 mint leaves
- 100 mL vegetable stock (very good)
- 1 piece bread (per person – choose your favourite, I used freshly baked granary bread)
- 2 slices goats cheese (good strong)
- olive oil (A little)
- salt
- pepper
- pea shoots (optional)
- mint leaves (optional)
