- 4 1/2 cups all purpose flour (I used 3 cups nutriblend, 1 ½ cups whole wheat)
- 4 tsp. ground ginger
- 2 tsp. baking soda
- 1 1/2 tsp. ground cinnamon
- 1 tsp. ground cloves
- 1/4 tsp. salt (I used sea salt)
- 1 1/2 cups shortening (I used butter, you should too! Skip the trans-fat.)
- 2 cups granulated sugar (I used organic evaporated cane juice)
- 2 eggs (I used free range from my friend Sandi who recently became a country girl)
- 1/2 cup molasses (I used pure without sulphites)
- 3/4 cup coarse sugar (I used just a bit)
