Description
These sunny cookies are kissed with a sweet orange glaze and are soft, almost cake-like. No one will know that the jewel-tone color is thanks to a healthy ingredient: pureed carrots. For adults, the cookies are perfect to serve with a cup of coffee or hot tea. The recipe is a Yummly original created by Ashley Strickland Freeman.

- 1 3/4 cups sliced carrots (peeled)
- 3/4 cup salted butter (softened)
- 3/4 cup granulated sugar
- 1 large egg
- 4 tsp. orange zest (divided)
- 3 Tbsp. orange juice (or up to 4 tablespoons if needed, divided)
- 1 tsp. vanilla extract
- 2 cups flour
- 2 tsp. baking powder
- 1/2 tsp. cornstarch
- 2 cups powdered sugar
- 1 pinch salt

Directions
- Place carrots in a small saucepan and add water to cover. Bring to a boil and simmer until carrots are very soft, 8-10 minutes; drain, saving cooking water. Put carrots in a food processor or blender and add 1 tablespoon of the cooking water. Puree until smooth, adding another 1 tablespoon of cooking water if needed for a smooth texture, and scraping container as necessary. Set aside to cool.
- Preheat oven to 350°F. Line 2 sheet pans with parchment paper.
- In a large bowl, beat butter and granulated sugar at medium speed with a mixer until light and fluffy, about 2 minutes. Add egg and mix just until the yolk disappears. Add 2 teaspoons orange zest, 1 tablespoon orange juice, the vanilla, and the cooled carrots and beat until blended.

I'd like to leave 4.5 stars just because I think the cookie itself needs a little more flavor, like maybe a hint of ginger. other than that it's fantastic and the cookie came out great!
