- 1 cup rice wine vinegar
- 1 cup soy sauce
- 2 Tbsp. extra virgin olive oil
- 200 grams chicken mince
- 1 Tbsp. garlic paste (chilli, from Asian food shops)
- 4 spring onions (thinly sliced, plus extra shredded spring onion to serve)
- 1 Tbsp. grated ginger (finely)
- 1/3 cup miso paste (white, shiro)
- 3 cups chicken (Massel, Style Liquid Stock)
- 270 grams soba noodles (cooked according to packet instructions, refreshed)
- 1 sheet toasted nori (torn)
- 100 grams enoki mushrooms (trimmed)
- shichimi togarashi (spice powder – from Asian food shops, to serve)
