- 1 lb. brussels sprouts (trimmed and sliced into three pieces)
- 8 oz. soba noodles (I use Eden Organics 100 percent buckwheat because they are gluten-free)
- 1/4 cup miso paste (Walnut, recipe follows)
- 1/4 cup rainbow chard (finely diced, stems, optional)
- 1/2 cup walnuts (toasted)
- 1/4 cup extra virgin olive oil
- 1 clove garlic
- 2 Tbsp. white miso paste (mellow)
- 2 Tbsp. white wine vinegar
- 1 tsp. honey
- 1/4 tsp. salt
- 1/4 cup warm water
