- 9 oz. soba noodles
- 1 mango (large ripe, cut into 1/4” thick strips)
- 1 2/3 basil leaves (chopped, or Thai basil but use much less, I used about 1/2 cup)
- 2 1/2 cups cilantro leaves (chopped)
- 1/2 red onion (sliced very thin)
