- 3 soba noodles (bundles uncooked)
- 2 chicken breasts (small)
- 2 bell peppers (I used one red, one orange)
- 2 medium carrots
- 1 red onion (small, thinly sliced into half-moons)
- 1/2 lb. snow peas (about 2 cups)
- 2 Tbsp. sesame oil (divided)
- 1 pinch salt (& pepper to season the chicken)
- peanuts (optional)
- chives (optional)
- chopped cilantro (optional)
- 2/3 cup natural peanut butter (stirred well if oil started to separate)
- 1/2 cup lower sodium soy sauce
- 1/3 cup water
- 1/4 cup honey
- 1 Tbsp. rice vinegar (apple cider vinegar can be substituted, or skip it if you don’t have either)
- 2 garlic cloves (minced)
- 1 inch ginger (piece of, minced)
- 1/2 lime (about 1 tablespoon)
- 2 dried Thai chili peppers
- 1/2 tsp. crushed red pepper flakes
- 1/4 peanuts (crushed)
