- 1 Tbsp. fresh ginger root (peeled, finely chopped)
- 3 oz. maitake mushrooms (sliced, OR 1 ounce dried shiitake mushrooms, soaked in warm water for 30 minutes, stems discarded, and sliced thin, about 1 1/4 cup)
- 4 cups dashi (shiitake, mushroom broth)
- 2 cups water (or the soaking water from the mushrooms if shiitakes are used)
- 1 pkg. soba noodles (lotus root)
- 1 medium carrot (peeled and sliced on the bias)
- 1 cup scallions (chopped)
- 2 Tbsp. tamari (or to taste)
- 1/2 cup cilantro leaves (optional)
