- 3 cups cucumbers (spiralized, if they are sliced, you will only need about 3 cups)
- 2 cups soba noodles (cooked)
- 2 cups veggies (assorted fresh, I used, bell pepper, carrots, edamame, cabbage etc. This is great for using any veggies of choice!)
- peanuts (for topping. optional)
- sesame seeds (for topping. Also optional)
- 1 Tbsp. ginger (fresh grated)
- 2 tsp. soy sauce
- 2 tsp. rice wine vinegar
- 1/2 tsp. sesame oil
- 2 Tbsp. olive oil
- 1 Tbsp. honey
- 1/2 tsp. minced garlic
- salt
- pepper
