- 4 tomatoes (ish kg ripe, any mix/variety will do)
- 2 Tbsp. olive oil
- sea salt
- 1 Tbsp. cumin seeds
- 1 Tbsp. coriander seeds
- olive oil
- 1 yellow onion (large)
- 1/2 tsp. sea salt
- 1 Tbsp. smoked paprika
- 1/4 tsp. chili flakes
- 1 1/2 cups black beans (cooked)
- 7 cups water (/veg stock)
- 2 corn kernels (cobs of, removed, keep the cobs!)
- 1/2 cup polenta (quick cooking)
- 1 lime
- 2 green onions (thinly sliced)
- 1 bunch cilantro leaves (roughly chopped, you can throw the stems in with the stock!)
- 1 Tbsp. olive oil
- 1/4 cup toasted pumpkin seeds
