- 4 Tbsp. butter (or non-dairy substitute, use butter substitute for vegan)
- 1/3 cup water

- 1/2 tsp. paprika
- 1/4 tsp. cayenne pepper
- 3/4 tsp. salt (or more to taste)
- 1 cup frozen green peas
- 2 cups arugula (or spinach, packed)
- Parmesan (optional topping - omit for vegan, use vegetarian Parmesan to keep vegetarian)
