- 1 1/2 cups corn (cooked, fresh, frozen, grilled - your choice)
- 1 red bell pepper (sweet, seeded and diced)
- 1 jalapeño pepper (ribs and seeds removed, diced)
- 1/2 red onion (diced)
- 8 oz. cherry tomatoes (halved or quartered)
- 1 avocado (diced)
- 2 limes (about 3-4 tbsp)
- 1/2 cup cilantro (packed)
- 1 garlic clove
- 1 tsp. smoked paprika
- 1 tsp. cumin
- salt (/pepper to taste)
- 3 Tbsp. grapeseed oil (or oil of choice; or water would work as well)
