- 3 Tbsp. liquid smoke
- 1 whole chicken (organs discarded, rinsed and patted dry)
- 2 tsp. smoked salt (plus more to season the chicken)
- pepper (to taste)
- 1 1/2 cups chicken stock
- 1 whole chicken (smoked, meat pulled)
- 1 onion (large, chopped)
- 1 red pepper (seeds and membranes removed and chopped)
- 2 poblano peppers (seeds and membranes removed and chopped)
- 2 jalapeño peppers (seeds and membranes removed, diced)
- 4 cloves garlic (minced)
- 1/2 cup chopped cilantro (finely, plus more for garnish)
- 28 oz. small white beans (canned, navy or great northern, drained and rinsed)
- 14 oz. canned black beans (drained and rinsed)
- 14 oz. fire roasted tomatoes (canned)
- 4 cups chicken stock
- 1 cup juices (from smoked chicken pan, if you're not smoking your own chicken use regular chicken stock and 1 tablespoon liquid smoke)
- 2 tsp. smoked salt
- 1 Tbsp. smoked paprika (2 tablespoons if not using a smoked bird)
- 2 Tbsp. cumin
- 1/2 tsp. chili powder (ideally smoked chili powder)
- 2 tsp. oregano
- 1 tsp. coriander

Tatsy. I used ready smoked chicken and plaice, which gave it an amazing double flavour (chickena nd fish) served with greek yoghurt, no cheese, half the stock and double the tomatoes, only black beans.served on boiled potatoes.
