- 2 kilograms pork ribs (meaty, fatty, sinew removed, you can ask your butcher to do this for you)
- 3 tsp. table salt
- 1/2 tsp. oregano leaves (crushed)
- 1/2 tsp. garlic powder
- 1 tsp. seasoning (chicken)
- 1 liter pork stock (or chicken stock)
- 100 grams pork fat (rendered, or duck fat)
- 1 Tbsp. table salt
- 2 Tbsp. white sugar
- 100 grams tomatoes (crushed tinned)
- juices (Reserved pan)
- 2 Tbsp. canola oil
- 1 brown onion (shredded)
- 2 cloves garlic (grated)
- 1 chilli (serrano, very finely chopped)
- 1 tsp. paprika (smokey)
- 100 mL tomato sauce
- 60 mL orange juice
- 125 mL apple cider vinegar
- 40 grams worcestershire sauce
- 60 grams molasses (honey or golden syrup)
- 1/4 cup firmly packed brown sugar
- 600 grams sweet potato (orange, or yams, peeled)
- 100 grams salted butter
- 60 mL maple syrup
- 3 sprigs parsley (to garnish, optional)
