- 4 cups boiling water
- 1 cup kosher salt
- 3/4 cup buckwheat honey
- 8 cups cold water
- 4 cups pilsner beer (2 x 500 mL tins or 3 x 350 mL tins)
- 3 bay leaves
- 2 cinnamon sticks
- 1 Tbsp. black peppercorn (whole)
- 5 cayenne (dried, chili pods)
- 8 cloves garlic (fresh)
- 1 onion (medium, peeled and coarsely chopped)
- 2 Tbsp. brown sugar
- 3 tsp. kosher salt
- 2 tsp. ground black pepper
- 2 tsp. ground cinnamon
- 2 tsp. cocoa powder
- 1 1/2 tsp. cayenne pepper
- 1/2 cup hoisin sauce
- 1 Tbsp. apple butter
- 2 Tbsp. soy sauce
- 1 Tbsp. chocolate syrup
- 1/2 tsp. red chili flakes
- 2 cloves garlic (minced)
- 1 tsp. lime juice
- black pepper (to taste)
