  • 1/2 cup orzo pasta (uncooked)
  • 3 cans white beans (drained, I used a combination of Cannellini and black eyed peas, since that's what I had on hand)
  • 1 can diced tomatoes (with liquid)
  • 2 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 teaspoon minced onion (or onion powder)

    I have a family of VERY picky eaters (even my husband won't eat onions, bell peppers, any of the squashes, olives, etc), but I needed to throw together a quick meal using smoked sausage and this looked potential. In short, everyone gobbled it up, and I was informed by all that this was a "keeper" recipe. Since one of my sons doesn't like spinach at all and my other son doesn't like cooked spinach. I didn't chop the fresh spinach -- I minced it so that it looked like I'd added fresh herbs, and that trick worked. I only had one can of white beans, so I used that and two cans of pinto beans. I served with fresh fruit salad (cut up mango, green grapes, peaches, and strawberries) and lemon-pepper steamed broccoli. Dinner was a hit. Thanks for this recipe!!!! (ps- the orzo does have a bit of a soft texture and I'd wondered if that might bother anyone, but it wasn't an issue)
