- 1 medium onion (diced)
- 2 large carrots (diced)

- 5 cloves garlic (minced)

- 4 cups low sodium beef broth (or your favorite broth)
- 2 cups water (purified)
- 1 Yukon Gold potato (large, peeled & diced)
- 1 medium sweet potato (peeled & diced)
- 15 oz. fire roasted diced tomatoes (drained)
- 15 oz. garbanzo beans (chickpeas OR great northern beans, drained & rinsed)
- 1 Tbsp. fresh rosemary (finely chopped, optional)
- 1/2 tsp. crushed red pepper (adjust this up or down based on your spiciness preference)
- 2 tsp. sea salt (like Celtic or Himalayan)
- 1 1/2 tsp. black pepper
- 3 oz. baby greens (kale, chard, spinach, arugula, etc.)
- grated Parmesan cheese
