- 2 salmon fillets (boneless and skinless, about 240g)
- 200 grams smoked salmon
- 1 lemon (zested, half juiced, half cut into wedges to serve)

- 1/2 parsley (a small pack, chopped, about 12g)
- 1 Tbsp. capers (chopped)
- 50 grams plain flour
- 1 pinch cayenne pepper
- 100 grams panko breadcrumbs
- vegetable oil (for frying)
- 75 grams mayonnaise (my favourite is Heinz light)
