- 1/2 shallot (chopped)
- 1/2 cup mayonnaise (I like to use mayonnaise made with olive oil)
- 1/2 cup low fat buttermilk
- lemon wedge (squeeze of, optional)
- 1 Tbsp. olive oil (lemon-flavored, can substitute plain olive oil)
- pearl couscous (1/2 cup Israeli)
- 1/2 cup chicken broth
- 1/2 cup water
- 3 oz. asiago cheese (aged, crumbled)
- 1/3 cup pepitas (toasted, Mexican pumpkin seeds)
- 1/3 cup currants
- 2 cups plum tomatoes (chopped seeded)
- 2 cups baby arugula (chopped)
- 1 1/2 cups corn kernels (I use frozen organic, thawed)
- 8 oz. smoked salmon (chopped)
