- 1 tsp. smoked paprika (+ more for sprinkling, use 1/4 tsp per chop)

- 10 cherry tomatoes (if you can find bunches still on the vine, it will look very pretty)
- 1 Tbsp. olive oil
- 1 shallot
- 1 clove garlic (minced)
- 1/2 cup arborio rice
- 1/4 tsp. dried dill
- 1/2 cup dry white wine
- 2 cups chicken broth
- 1/2 cup green olives (pitted, chopped)
- 2 oz. goat cheese (crumbled or cut into bits if creamy)
- 2 Tbsp. Parmesan cheese
- kosher salt
- freshly ground black pepper
