- 150 grams trout (Hot smoked Ocean, or Salmon skin removed, flesh broken into nice big chunks and set aside)
- 1 cup basil leaves
- 1 cup extra-virgin olive oil
- 1 bunch kale

- 2 Tbsp. lemon rind (finely chopped preserved)
- 2 tsp. rice vinegar (or white balsamic)
