- 2 leeks (washed, and chopped)
- 2 haddock fillets (smoked, dyed or un-dyed)
- 200 grams penne pasta (we use the gluten free brown rice penne from Waitrose)
- 250 mL cream (vegan, we use Oat.ly cream as it doesn’t split)
- 1 handful breadcrumbs (sourdough best but anything will do)
- 1 handful fresh parsley, chopped
- sea salt
- pepper
- 2 olive oil
- fresh nutmeg (if you have it, optional really)
- lemon (Squeeze of, again, if you have it as not essential)
- vegan cheese (Grated, optional)
