Skeptical because I have never had pork meat in a a soup. Turned out great & husband agreed. I had used diced tomatoes that were packed with green chiles (because that’s I had for diced tomatoes). I definitely would use the Ro-Tel diced tomatoes with green chiles. Liked the spice & now would be concerned that plain diced tomatoes would be too bland. The lime & cilantro garnish is a must. I did not have fresco so left out. Was still excellent without but am sure it would add to the flavor. It is more like a meal or stew than just a course of soup. I served with slices of air fried polenta.

This was more of a meat entree than a balanced soup. If I make it again, I’ll use half the meat and double everything else. And triple the spices. But the flavor is good.

This is one of my husband's favorite recipes! i have demands to make it a few times a month! we usually put a little more lime in it and salt to ensure a fantastic taste!

Overall, is a good, hearty soup, especially for a cold winter day. I did add about a teaspoon garlic powder and 3 teaspoons of chili powder on the second try and will likely add more chili powder if I make it again. Would also be great garnished with jalapeño slices - we are a family that loves spicy though!
