- 2 Tbsp. olive oil
- 80 grams pancetta (chopped)
- 1 onion (finely chopped)
- 2 sticks celery (reasonably finely chopped)
- 6 cloves garlic (crushed)
- 1 Tbsp. fresh rosemary (finely chopped)
- 2 Tbsp. fresh oregano (finely chopped)
- 2 Tbsp. tomato paste
- 2 cups red wine
- 400 grams passata (crushed, sieved tomatoes)
- 2 tsp. caster sugar
- sea salt
- freshly ground black pepper
- oregano leaves (to garnish, optional)
