  • 2 envelopes onion soup mix
  • 1 tablespoon ground cumin
  • 1 tablespoon cayenne pepper
  • 1 tablespoon sweet paprika
  • 1/2 teaspoon ground ginger
  • 5 1/2 pounds pork butt (Boton, boneless)

    Directions

    1. In a bowl, mix the soup powder, cumin, cayenne pepper, paprika and ginger. Rub all over the pork. Place in a roasting pan, cover with aluminum foil and chill overnight.
    2. To cook, preheat the oven to 300°F. Remove the foil from the roasting pan and roast the pork for 5 hours, basting occasionally. Remove from the oven, cover and allow to rest for 10 mins.
