Made this on the stovetop using a simmer mat to cook very slowly to perfection without fuss. I upped both taste and nutrition by adding extra carrots for sweetness, 1 1/2 cups dried green lentils and a scant amount of liquid smoke to balance out the smallish russet potatoes I used in place of the creamer potatoes, as I didn’t happen to have them on hand. But as the creamer potatoes are yummy and sweeter, I’ll definitely use them to make another pot of this tasty soup that manages to be both hearty and healthy, a rather uncommon combination. Delectable!
