Yum! This was great for using up the Christmas leftovers. Made the house smell great all over again.

I followed the ingredients as a suggestion and substituted one whole leek for the green onions. In addition, I made my own broth from a leftover turkey carcass and then adapted the recipe for the Instant Pot pressure cooker. When I made the soup, I used one whole leek, reduced the meat to two cups, and added potatoes and kale. Then I pressure cooked it for three minutes on high and did a quick release of the pressure. The soup was delicious.
