This turned out really yummy. It needed longer than 3 hours on high for the sweet potatoes to cook, took about 4 hours in my crockpot. Also, the recipe doesn’t say whether to drain the canned black beans and corn or include the liquid. I didn’t drain them, and it ended up with a bit more liquid than the picture shows, but it was still really tasty so we didn’t mind. More like the consistency of a black bean quinoa chili. I also used honey instead of maple syrup because it’s what I had on hand. It adds a nice sweetness to the spicy flavor. I will definitely make it again.
