- 2 1/2 lb. chuck roast
- 2 onions (sliced)
- 2 Tbsp. ghee
- 4 cloves garlic (minced)
- 2 bell peppers (1 red, 1 green, sliced)
- 8 tomatoes (peeled, seeded and chopped)
- 2 Tbsp. tomato paste
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. cumin
- 1 tsp. oregano
- 1 tsp. smoked paprika
- 1/2 cup beef broth

Directions
- Melt 2 tablespoons of ghee in a heavy-bottomed pan over medium heat and saute the onions until translucent.
- Add the peppers and garlic, saute another 3 minutes until garlic is fragrant, then transfer to the slow-cooker.
- Brown the roast on all sides about 5 minutes, then transfer it to the slow-cooker.
