  • 2 1/2 pounds chuck roast
  • 2 onions (sliced)
  • 2 tablespoons ghee
  • 4 cloves garlic (minced)
  • 2 bell peppers (1 red, 1 green, sliced)
  • 8 tomatoes (peeled, seeded and chopped)
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • 1/2 cup beef broth

    Directions

    1. Melt 2 tablespoons of ghee in a heavy-bottomed pan over medium heat and saute the onions until translucent.
    2. Add the peppers and garlic, saute another 3 minutes until garlic is fragrant, then transfer to the slow-cooker.
    3. Brown the roast on all sides about 5 minutes, then transfer it to the slow-cooker.
