So yummy and hearty! I added more carrots because I Love carrots. I cooked everything but the orzo in the pressure cooker for 3 minutes then added the orzo after and used the sauté feature and tossed the orzo in. It was perfect!

Very adaptable and tasty recipe. I used brown lentils instead of the red as that's what I had on hand. I also added a handful of spinach along with the orzo. Thanks for the suggestion! I also added the juice and zest of half of a lemon to brighten the flavor.

Made it three times now.
I substitute diced for crushed tomatoes, as it makes it a bit thicker, and I add a couple fist fulls of spinach to it. Delicious!!!
