- 1 onion (large, chopped small)
- 2 tsp. olive oil
- 1 Tbsp. minced garlic (finely)
- 2 tsp. dried thyme
- 1 tsp. dried oregano (Greek oregano preferred)
- 1 Tbsp. Creole seasoning (Tony Chachere's, more or less to taste depending on how spicy you want it., Remember the sausage is also a little spicy.)
- 2 cans red beans (15 oz. can, or 3 cups cooked red beans)
- 8 chicken andouille sausage (links, 20 oz. Amylu, or use any sausage you prefer, but I loved this sausage)
- 8 cups homemade chicken stock (or use 5 cans chicken broth)
- 2 Tbsp. worcestershire sauce
- 2 tsp. green Tabasco sauce (or more if you want a lot of heat)
- 3 bay leaves
- 2 cups cooked white rice (plus more for serving if desired., It takes 1/2 cup uncooked rice to make 2 cups cooked rice; I cooked one cup of rice for the recipe but I had some left over.)

I used the link to make red beans and rice in slow cooker with 3 cans cooked beans. I’m serving with brown rice. Did add a dried hot pepper to the mix. Sautéed onion, garlic and then spices and added meat and cooked to make bottom of pan more crispy. Then added 1/2 cup of broth to the pan to release all the goodness. Then added all to crock pot. I’m cooking for 4 hours on high and will check,because cooked beans will break down faster. Holy cow , this was salty. Hope the rice absorbs some

It was delicious and big hit with the family! I paired it with jalapeño cornbread and added some shrimp the second time around!
