Description
For this delicious recipe, pork tenderloin nestles on a bed of sauerkraut and is topped with a mustard sauce, apples, and onions. It’s a classic combination, and the slow cooker makes it easy. A pork tenderloin is a lean, tender cut of pork so it cooks for only 2 1/2 to 3 hours, making this an ideal recipe to start in the afternoon, then enjoy for dinner that night. - 1 medium onion
- 1 Tbsp. unsalted butter
- 1 jar sauerkraut (24 oz. per jar)
- 1 tsp. extra-virgin olive oil
- 1 pork tenderloin (1 to 1 1/2 lb., silverskin removed)
- 1 tsp. smoked paprika (or regular paprika)
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 3 Tbsp. whole-grain mustard
- 1 Tbsp. balsamic vinegar
- 1 medium apple (preferably Granny Smith or other tart, crisp cooking apple)
- 1/3 cup reduced-sodium chicken broth
- fresh dill (or parsley, minced)

Directions
- Thinly slice onion. Melt butter in a medium frying pan over medium heat. Add onion and cook, stirring occasionally, until tender, about 5 minutes. Set aside.
- Meanwhile, pour sauerkraut into a colander; rinse and drain. Press down on the sauerkraut lightly with the back of a large spoon to drain well. Pour it into a 4- to 6-qt. slow cooker.
- Working on a plate, drizzle olive oil over pork, then lightly rub oil evenly over the meat. In a small bowl, stir together paprika, salt, and pepper. Sprinkle seasoning mixture evenly all over the pork. Place pork on top of sauerkraut in the slow cooker. In the same small bowl, stir together mustard and vinegar. Spoon mixture evenly over pork, then spoon sauteed onions on top.

Incredible! It's a simple recipe but elegant enough to be special. The sauerkraut, onion, and apple mixture was great, plus the mustard, vinegar, and spices jazzed up the pork. I'll be adding this to the rotation.
