- 8 oz. rice noodles (or whole grain pasta noodles)

I used light soy sauce, but it was still too salty for my taste. I may make it again, but I will lower the soy sauce by a tablespoon and perhaps add a little extra peanut butter, as I found the peanut taste was overwhelmed by the soy. It looked fantastic with all the veg (I used fresh), and I served with rice.
