- 4 pork chops (thick-cut)
- 1 Tbsp. coconut oil
- 1/2 cup chicken broth (or dry white wine)
- 2 tsp. apple cider vinegar
- 1/4 cup dried figs (finely chopped)
- 1 Tbsp. honey
- 1/2 tsp. fresh thyme
- 1/2 tsp. fresh sage

Directions
- Heat the coconut oil in a heavy-bottomed pan over medium heat. Brown the pork chops in batches, about 5 minutes a batch, and transfer to the slow cooker.
- Add the figs with the vinegar, broth, herbs and honey, making sure to stir the honey so it's not a clump. Cook for 6-8 hours.
