- 1 onion (diced)
- 5 strips bacon (chopped, OR just cut a pack of bacon in half and go with that)
- 1 red bell pepper (diced)
- 3 cloves garlic (smashed and minced)
- 3 tsp. paprika
- 2 Tbsp. all purpose flour
- 1 can tomatoes (whole, chopped, reserve the juice so you can enjoy later)
- 2 cups chicken stock (make from powder)
- 1 cup cooked white rice
- 1/2 cup beans (yard, chopped in 1 inch pieces)
- 1 Tbsp. sour cream (OR use plain yogurt)
