- 1 cup cabbage (chopped, – green or red, either will taste delicious)
- 1 can black beans (drained & rinsed)
- 1 cup cherry tomatoes
- 1 red onion (chopped)
- 1 cup frozen corn (or fresh)
- 1 can hominy (drained & rinsed – this is optional, but I’d recommend it – so delicious in the stew!)
