- 1/2 yellow onion (medium, diced, about 3/4 cup)
- 3 cloves garlic (minced)
- 14 oz. cream style corn
- 28 oz. corn (drained, or use about 3 cups frozen)
- 2 sweet potatoes (large, peeled and cubed, or regular potatoes)
- 3 boneless skinless chicken breasts (cubed)
- 5 cups chicken broth (I use reduced sodium)
- 1 Tbsp. fresh thyme
- 2 tsp. parsley flakes (dried)
- 1 tsp. salt
- 1 tsp. freshly ground black pepper
- 1/2 cup whole milk
- 2 Tbsp. cornstarch
- parsley (optional: fresh, or dried, for garnish)
