  • 1 pound lentils (rinsed)
  • 3 cups low sodium vegetable broth (organic)
  • 4 cups water
  • 4 carrots (diced)
  • 1 onion (diced)
  • 6 cloves garlic (diced)
  • 1 can diced tomatoes (I used fire-roasted)
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • salt
  • pepper
  • 2 cups baby spinach

    I ended up cooking this for 12 hours on high before the lentils were done. What my family thought was going to be lunch turned into dinner after we boiled some on the stovetop for 20 minutes while the rest sat in the slow cooker. I would not make this again.

    I soaked the lentils overnight and cooked it for 8 hours on low and they were still a little underdone. Even though i added more spices and garlic than called for, I still found the flavour underwhelming. I will not make this one again.

    Never cooking this dish again. Going to cook lentils separately as they were in the slow cooker for 9 hours due to work problems and still hard

    I don't understand how this can take 4 to 6 hours to completely cook. I have had this on low in the crock pot for 7 hours and the lentils are still not done. I will never make this recipe again.
    It was delicious! Very easy to make in the slow cooker...if you don't have fresh spinach you can substitute a package of frozen chopped spinach(thawed) the last 15min.
