This turned out OK. I had it on low for 7 1/2 hours, and it was already dried out. Also I added salt to the spice rub, but the meat still needed a lot. Finally I made a pan sauce (thickened with corn starch) out of the liquid to salvage the meat. I may try it again but temp at the 6 hour mark.
