- 3 cloves garlic (minced)
- 1 Tbsp. ginger (grated)
- 1 1/2 cups water
- 1/4 cup soy sauce (for gluten - free use coconut aminos)
- 1/4 cup seasoned rice vinegar (or plain rice vinegar mixed with 1 teaspoon sweetener)
- 2 Tbsp. vegan chicken flavored bouillon
- 1/2 tsp. red pepper flakes
- 1 bell pepper (cored and diced)
- 5 oz. mushrooms (diced)
- 8 oz. water chestnuts (drained and diced)
- 12 oz. seitan (store-bought or homemade, diced, sub 1 1/2 cups chickpeas, cauliflower florets, or pressed tofu)
- 3 Tbsp. cornstarch
- 2 Tbsp. sesame oil (leave out to make oil-free)
- steamed rice (for serving)
- chopped peanuts (for serving)

I never made chinese in the crock pot, but this recipe is going into the regular family meal rotation. This is a great vegan meal! Used the chickpeas instead of seitan and it was fab! All three kids loved it and wolfed it down. Sauce was flavorful and the right consistency, the water chestnuts and peanuts added crunch. So good.
