- 1 lb. lean ground beef (100% grass-fed if possible)
- 1 yellow onion (medium, diced)
- 1 green bell pepper (medium, diced)
- 1 red bell pepper (medium, diced)
- 2 cloves garlic (minced)
- 15 oz. tomato sauce (I like Muir Glen)
- 14.5 oz. fire roasted diced tomatoes (same brand as above)
- 2 cups low sodium chicken stock (could sub beef stock if you prefer)
- 1 tsp. Italian seasoning (dried)
- 1/2 tsp. dried oregano
- 1 tsp. garlic powder
- 1/2 tsp. onion powder
- 3/4 tsp. fine sea salt (or salt to taste)
- 3 cups basmati rice (cooked, 1 cup dried equals about 3 cups cooked)
